Mirza Qasemi — said to be named after Mirza Qasem, a 19th-century Guilani aristocrat. The dish that put Rasht on UNESCO’s gastronomy map. Whole eggplants are charred over an open flame until the skins blister black, then the smoky flesh is slowly folded into garlic, ripe summer tomatoes, and farm eggs until everything melts together. A good Mirza Qasemi is judged by the depth of its smoke, the more open-flame char, the better. We grill our eggplants over wood the way our grandmothers did. No microwave, no shortcuts.

Pomegranate Duck Stew (Fesenjan) — “fesen” in old Gilaki means “walnut paste.” Toasted walnuts and pomegranate molasses simmer slowly for a full day until the sauce turns the colour of the Caspian Sea at dusk — somewhere between port wine and old leather. The result is a deep, velvety stew layered with rich, complex flavour shaped by time and patience. In Gilan, fesenjan favours duck (or pheasant, if you can find it) over chicken; the gamey richness balances the sweet-tart depth of pomegranate. We toast our walnuts in-house and grind them by hand to release their natural aroma and oils. This dish is a celebration of slow northern Iranian cooking, made to be savoured, unhurried, and enjoyed.

Reshteh Khoshkar — one of the most famous traditional sweets of Gilan, especially the city of Rasht. “Reshteh” refers to very thin layers of batter skillfully poured in a net-like pattern onto a hot pan. They are filled with a mixture of ground walnuts, sugar, cinnamon, and cardamom, then fried until golden. Finally, the pastry is soaked in fragrant syrup, giving it a soft, sweet, and aromatic texture. This dessert is rooted in the hospitality culture of Gilan, often prepared for family gatherings, Ramadan iftars, and long rainy northern nights. Reshteh Khoshkar is more than a dessert, it is a piece of Gilan’s culinary heritage passed down through generations. We fry this dessert until golden, then finish it with our homemade rosewater and saffron molasses for an authentic touch.
